Fake Baked Potato Soup
- 2 potatoes
- 1 head of cauliflower
- 1 cup chicken broth
- 1 cup 1% milk
- 1/2 lite cup sour cream (I substituted greek yogurt)
- Chives
- Cheddar cheese
Poke holes in the potatoes and toss in microwave for 5 minutes; turn them and cook for another 3 minutes. Cut them open to cool slightly; remove skin.
While potatoes are cooking, cut up cauliflower and steam until tender.
There are two ways to do the next part: throw potatoes and cauliflower in with the liquids and use an immersion blender; or my way, which is to throw the potatoes and cauliflower into a food processor and then mix with the liquids.
Either way, bring the potato+cauliflower+milk+broth mixture to a light boil. Add in chives (to your taste) and sour cream (or greek yogurt). Simmer for 10 more minutes.
Ladle into a bowl, and top with 2 tbsp cheddar cheese, more chives, and/or some bacon bits (I love to add a little turkey bacon).
207 calories, 7.8 grams of fat, 22 carbs, and 12 grams of protein per 1 cup serving.
